Yummy, Quick 'n Easy...
Chorizo & Chickpea Stew
Ingredients: Feeds 6
Big Bag of washed spinach
500g sliced Chorizo
1 tin chickpeas
3 cloves chopped up garlic
Bag of new potatoes
1 chopped onion
1 Jar of Tomato/Onion pasta sauce
Couple of glugs of olive oil
Here we go!
Preheat oven to 220C.
Boil the potatoes for 10 minutes. Drain. Then crush them up a bit with a fork, glug some olive oil and salt onto them, and roast for 30 minutes in hot oven.
Lightly fry the onion, garlic & chorizo in a glug of olive oil, for around 10 minutes (until onion is transparent and softish)
Drain half of the oil (chorizo will ooze out huge amount of oil!)
Add the chickpeas & pasta sauce - simmer gently for another 10 minutes.
Blanch the spinach in boiling water for 10 seconds, add to the chorizo dish..
By now the potatoes should be all lovely and roasted up, serve over hot potatoes with a glass of red wine.
