Yes. That is a little carrot you see. Yes. That is only a 5cm high pot you see. Maybe we're not as green fingered as we thought. I've had it on my 'LIST' for 2 weeks to buy a bigger pot. For now... I told the kids they're dwarf carrots. Tayla was like ... Mom, are you stunting their growth like a jockey?? Me. No Baby... No ways, They're just........Special.
Its been a month of birthdays in this crazy house this month. The sweet girl you see below turned SIX yesterday. SIX! Sweet Shanah, your sense of humour cracks me up, your imagination runs wild ALL the time and you pretty much live in your own little world. I love you sweet girl. Happy Sweet 6th Birthday.
We celebrated with a Princess party (of course) and a Day @ Longleat Safari Park. They both rocked. Will blog on it all tomorrow - prepare yourselves for a FEAST of cool photographs.

I got this awesome cup at a cheapie little shop in town. I LOVE THIS CUP. I love the colour. I love the polka dots. I love the pud on top to keep my coffee warm (total solution to cold 'Mom' coffee!) I love the contents - Tchibo Cappucino Choco, I love that it fits perfectly in my hand.. love love love :)
My Little Tom-boy grew up. Overnight. Poof. Just like that. One minute she was sleeping on my chest every night (up until whe was 6 months old I'll have you know, I was a single mom so it was easy) And literally like
THAT... BOOM! She is 11 and going to her Primary School Leavers Prom. Oh My heart, be still.
Today is Niamh's last day of Primary School, and although she is over the moon to be growing up and going off to high school, Mommy is still holding onto her baby - and the fact that I am not old wise enough to have a tweenie, it was just the other day I was playing with my dolls, so what do I know? (ok, ok I played with my dolls waaaaaay past the normal age of playing with dolls) Today she sung a solo at their School Leavers Celebration Service, and rocked the church :)
Niamh (L) and her BFF Nina
Niamh, you are such a good, cool kid. You love 'family' and you love your friends. I love you with all my heart sweet girl - enjoy High School, you will be sooooo cool at it.
So.,.. thats my cupboard.... we went out LAST Monday night on 'date night' (a-hem *cough cough* its Monday already again and the clothes are still on the floor....)
I bought a really nice dress that my beautiful friend Kerrie had bought and I loved. It looked HIDEOUS on me. Like Colosally GINORMOUS. My boobs were spilling out everywhere, my back fat was hanging over the back of the dress. It was just horrible. What's even worse is that my Mom was here while I was getting ready. You know how brutally honest moms can be. "Yip, you look fat. Take it off" Thanks mom. So I threw a strop and threw all the clothes all over the floor, and ended up wearing a wrap dress that I've had for about 10 years. (hate that wrap dress)
I really need some sort of style. I wish I could hire Auntie Gok for a day - he would totally sort me out. I'm sitting here as we speak bidding on stuff I dont even think fits clothes I really need on E-bay. I'm dragging Dave round to Clarks Village Outlet Shops this afternoon to mope over the clothes i wish I could fit into.
I guess we could say the diet is not going as planned.... How the h*ll did I PUT ON a kilo in a week when I was starving myself? Not even one little pud for Kerry - sad times :(
Right, I'm off to pick up all the clothes above and throw them in the bin.
My first recipe is: Wrapped up Camembert (the real name is Quiche Normande, but I cant really pronounce that. Imsostupiddotcom)
Its Lush! :)
Jus-Rol Shortcrust Pastry (or any brand of ready-made cheating pastry)
2 rashers of smoked bacon ** note... VEGGIE OPTION. OMIT BACON AND REPLACE WITH A BIG DOLLOP OF RED ONION MARMALADE. OR SWEET FIG PRESERVE. Nom Nom **
Fry off the onion in a splash of olive oil and 7 tsp of water. (i have no idea why 7, but its my fave number so thought I would chuck it in) Fry until nice and soft.
Fry the bacon until cooked.
Slice the Camembert in half horizontally
Roll out the pastry until 5mm thick, place one half of the Camembert on top and and just cut around it into a circle (enough to completely cover the Camembert, but don't actually cover it, we need to top it first! )
Top with the soft, caramelised onions and bacon (you may need to fold the bacon in half)
Place the other half of the Camembert on top, and squish it all down with your hand. Fold the pastry up around the whole tower of deliciousness, twist 'n turn it if you like.
Pop into a hot oven ( 200 C ) for 25 - 30 mins until brown.
